An Ancient Traditional Sweet

Dulce de mezcal has been produced in Mexico for generations, originally created and enjoyed by rural communities as a traditional food. The sap from the center of the broad maguey leaves has a high sugar content, making it perfect for boiling down into a molasses-like syrup.

The process of harvesting the aguamiel (honey water) from the maguey heart and cooking it into dulce is very labor intensive. The maguey sap has to be extracted twice a day for several months to gather enough sweet liquid before it ferments. It is then boiled for hours to reduce it to a dense, caramel consistency.

To produce mezcal, the maguey heart is baked in underground stone pits, imparting a characteristic smoky essence to the plant. It is then fermented with wild yeast and distilled into liquor.

Thus the same plant provides two very distinct Mexican specialties - the rich, maple-like dulce syrup and intense smoky mezcal spirit. Trying them side by side offers a fascinating taste comparison of how maguey can provide both sweet and strong libations.

Seeking Out Dulce de Mezcal

Because authentic dulce de mezcal is still made primarily in small family workshops, it can be difficult to find outside of some rural Mexican towns. However, a few specialty food shops focused on traditional Mexican cuisine may carry jars of dulce de mezcal to share its unique sweetness with the rest of the world.

Pairings and Uses

Real dulce de mezcal has no artificial ingredients or preservatives, so the syrup has a relatively short shelf life compared to commercial candies. Once a jar is opened, it should be refrigerated and used within a few weeks.

The caramel-molasses like syrup can replace sugar in drinks, desserts, baked goods and more. For the fullest flavor experience, drizzle it sparingly over fresh cheeses, vanilla ice cream, flan, atop cocoa, or mix into horchata drinks.

When purchasing dulce de mezcal, select jars with labels specifying it is made from 100% aguamiel de maguey. Some candies made from other fruits or sweeteners may try to pass themselves off as dulce for novelty. Checking for the maguey and Mexico origins ensures the real, rich flavor.
